When it comes to choosing a wine to complement a particular dish, the contrast of flavours and the texture and aroma of the food should be taken into account in order to marry both things together perfectly.
There are some guidelines to bear in mind when deciding on which wine to choose.
Light-bodied white wines: they complement seafood, grilled or barbecued lightly-seasoned white fish and slightly spicy cold meats.
Sweet white wines, Semi-dry: They go well with fruit, foie-gras, blue cheeses and pastas.
Rosé wines: They are the perfect accompaniment to oily fish, paella and rice dishes with meat, Italian pasta dishes, vegetable stews, pork and chicken.
Young red wines: They are perfect with roast lamb, gelatinous meats, meat stews, roast beef and mild or semi-cured cheeses.
Mature red
wines: vintages and semi-vintage wines and Reservé wines.
They are great with roast or grilled beef, game and some poultry.
